ELABORATION | Manual, selective harvest during the morning. Passes through a cold chamber at 8ºC for 3 hours. Destemming and crushing. Inoculation of selected yeast and controlled fermentation at 26ºC. During alcoholic fermentation, a manual reassembling followed by a daily delestage starting on the third day of fermentation. Completed the spontaneous malolactic fermentation. |

Serve between 16ºC and 18ºC. This wine may present some precipitation due to its natural stabilization. To better enjoyment, decant one hour before serving.
